Nut Free Carrot Cake Bliss Balls

Ingredients
  • 2cups desiccated coconut
  • 2 small carrots quartered(about 120 grams)
  • 10 medjool datesseeds removed
  • 1/4cup raisins
  • 1tablespoon tahinican use almond butter if there are no allergies
  • 1/4teaspoon cinnamon
  • 1teaspoon natural vanilla extract
  • Pinch of salt or dulse flakes
Instructions
  1. Place the ingredients into your food processor and blend at high speed until the mixture is broken down and sticking together when pressed.
  2. Using your hands, shape the mixture into balls.
  3. Roll the balls through extra desiccated coconut if desired and place in the fridge to set.
  4. These can be stored in the fridge or freezer and thaw very quickly at room temperature.
