Beetroot and Apple Salad
I first discovered this salad when I discovered the thermomix, however don’t worry you don’t need a thermomix to make it. A regular food processor will work just fine. You may just need to chop the vegetables a little smaller.
Thanks to the discovery of this salad, my intake of vegetables increased dramatically, which ultimately led me to regain my health, lose weight and increase dramatically my energy levels. I loved the idea of blitzing salads so much, due to the speed of preparation and minimal fuss, that I researched more recipes just like it. I therefore highly recommend you try the Broccoli Salad and Cabbage & Pear Salad and make these salads a regular in your diet. Once you try them I am sure you will.
For a super nutritious and healing lunch I combine a couple of these salads on a bed of green leaves, add some avocado and fermented vegetables and sprinkle with some nuts. For extra protein Ill make the famous yet easy ‘Life saving loaf of bread’, which is full of nuts and seeds as well as a boiled egg. Such a heavenly mix that’s also filling and satisfying! Store these salads in a glass container and enjoy at home or take to the office for a delicious power lunch. Keeps fresh for 3 days in the fridge.

Beetroot and Apple Salad

Ingredients
- 2 raw beetroots quartered
- 3 carrots cut into pieces
- 1 green apple cored and quartered
- ¼ red onion
- 1 bunch fresh coriander
- 2 tablespoons extra virgin olive oil
- Juice of half a lemon
Instructions
- Place all ingredients in a food processor and chop for a few seconds until desired consistency is achieved.
- Remember to keep the skins on for an extra nutritional boost.
